Summer is in full swing. Hopefully you’ve given yourself downtime to do some reading. Here are two great books to add to your list. Raise A Smarter Child by Kindergarten, by David Perlmutter, MD and Carol Colman and Health and Nutrition Secrets that Can Save Your Life by Russell Blaylock, MD. Maybe not your typical summer read, but these books can definitely improve your life. Both books emphasize the importance of eating plenty of fruits and vegetables everyday! Did you know that it is recommended that you eat 7 to 10 servings? Sounds like a lot, doesn’t it? But here are some helpful suggestions.
Buy your fruits and vegetables from a wholesale grocer, like Produce Junction, where they are far less expensive than your neighborhood grocer. The goal is to open your refrigerator and see a rainbow of color (remember ROY G BIV) – blueberries, strawberries, broccoli, string beans, watermelon, honeydew, eggplant, red pepper – and so many terrific ways to use them. Make a huge fruit salad once or twice a week. You are more likely to eat fruit if it’s ready to go. Peel and cut fruit into bite-size pieces for your kids to eat as snacks. A beautiful plate of grilled vegetables, such zucchini, summer squash, mushrooms, peppers, onions, compli-mented by grilled chicken breast or salmon, makes a delicious dinner and is so easy to prepare. Fruits smoothies are another healthy way to get lots of fruit in your daily diet – blend together one cup of skim or soy milk, 1 tablespoon of flax seed, 1 cup of fruit, 1 teaspoon of honey, and a handful of ice, and you’ve just made a great snack or breakfast for adults or kids. Add fruit to your hot oatmeal or cereal. Snack on celery, carrots, or broccoli with hummus, all- natural peanut butter or a low fat blue cheese dressing. The choices are endless…
Be imaginative. Instead of unhealthy potato chips, how about Kale Chips? Kale is the highest anti-oxidant vegetable on the planet. Nancy Popkin, a local holistic health counselor and nutritionist, taught me about these healthy "chips" and they were delicious. Google "Crispy Kale Recipe" to find different recipes.
